LOCAL DISHES

Our local culinary heritage is well worth sampling. We particularly recommend the following dishes:-

Cruet de peix (a fish stew).
Arros amb fesols i naps (rice with beans and turnips).
Arros al form (rice cooked in the oven).
Putxero amb penques i pelotes (stew with artichoke leaves and meatballs).Paella, la "borreta" and "guisao de caragols" (a snail stew).
Paellla Valenciana (usually rice, chicken and rabbit).
Coques (bread base with a topping, not unlike a pizza) in all their various forms, are one of the many marks that Arab culture left in its wake, the most popular are :-
• Mullador (tomato, ambergine and red pepper).
• Anxova (anchovirs).
• Pesol (peas).
Sardina de bota (salted sardines).
Jionganissa (sausages).
Melva (a variety of salt fish)..Bollos (savoury pasties), as modest and as popular as the Coques, and have as their main ingredients peas and spinach.
Mullard (tomato ,aubergine and red pepper).

Sausages
Our sausages are deservedly famous throughout the region, where true master butchers are still to be found carrying on the ancient craft of their forbears in the
preparation of pork sausages. This craft originated with the now discontinued tradition of the " slaughter " a festival of providing food for the household for the winter months.

Our most popular sausages are:
Morcilla de cebolla ( botifarra de ceba ) - Blood sausages with onion.
Morcilla de carne - Blood sausages with meat.
Longaniza roja - Red pepper sausage.
Longaniza blanca - White sausage.
Sobrasada - A red sausage which may be used for spreading when fresh.
Blanco - White sausage.
Bufa - blood sausage with meat in a bag-shaped skin (similar in appearance to haggis ).
Garro - Similar to "bufa".

Almendrados (Small almond cakes of a fairly chewy texture).
